Lemon Feta Orzo Pasta Salad
A trick with the mayonnaise in this recipe is all you need to bring it from meh..
..to memorable. But before we dive into that, let’s get something straight.
There are two camps of people - pasta salad people and potato salad people. Rarely do they cross over, and rarely is the affection equal across the boards. You’re either a pasta salad person, or a potato salad person. That’s right, it’s black and white with no grey area in sight. Yes, I am ruthlessly making blanket conjecture but hey it’s my newsletter.
Me? I am, have always been, and always will be, a pasta salad person. I do make a (not traditional by any means) potato salad that I absolutely love, and you can find that recipe here, but other than that, I will always choose pretty much any pasta salad over any potato salad. Why? It’s the mayo.

Full stop. Let’s get one thing straight. I love mayo. I dip my fries in it. My favorite salad dressings and sauces are filled with it. A sandwich isn’t a sandwich without it. But I don’t like it when it drowns potatoes and I especially don’t like it when it smothers cold pasta.
